Proanthocyanidins are a general term for a large class of polyphenolic compounds that widely exist
in plants. Their common feature is that anthocyanins can be produced by heating in an acidic medium,
so they are called procyanidins. Proanthocyanidins are a kind of pigment component in plants and
are widely present in various plants. Structurally, proanthocyanidins are formed by combining different
amounts of catechin or epicatechin. The simplest proanthocyanidins are catechins, epicatechins, or
dimers formed by catechins and epicatechins, in addition to trimers, tetramers, etc. up to decamers.
According to the degree of polymerization, two to pentamers are usually referred to as oligomeric
proanthocyanidins (OPC for short), and those above pentamers are referred to as high-polymer
